Tallow all but disappeared from health-conscious people’s kitchens during the 20th century’s low-fat boom, but it's starting to grow in popularity once more.
Much or all of the damage done by frying comes from oxidation of linoleic acid. The lower the percentage of linoleic acid the better, and grass-fed tallow has 1%.
Beef tallow has a delicious taste, and it adds a lot of flavor to food. The smoke point is 405°F and is one of the most heat-stable cooking fats available.
Since it has excellent stability, beef tallow is non-perishable food, and it does not require refrigeration. Keep it on your cooktop so it's readily available. If you're not using it for an extended period of time, you can refrigerate the jar.
